Easy Reuben Casserole Recipe
Report
All the classic ingredients for a Reuben sandwich, except this Reuben casserole is made for a crowd. Enjoy as a main dish or omit the bread crumbs and serve as a dip!

Ingredients
- ½ cup mayonnaise
- ½ cup Thousand Island dressing
- 1 teaspoon caraway seeds optional
- 16 ounces Sauerkraut drained and squeezed dry
- 12 ounces deli-style sliced corned beef shredded or chopped fine
- 1 16 ounce Swiss cheese, shredded
- 3 cups dark rye bread crumbs about 3 slices
- 1/4 cup butter melted
- Parsley for Garnish
Instructions
- Preheat oven to 350°F degrees. Lightly grease a 9" x 13" casserole dish with non-stick cooking spray. Set aside.
- Shred Swiss cheese. Place bread in a blender or food process and pulse until crumbs form. Drain sauerkraut and set aside.
- In a small mixing bowl mix together mayonnaise, Thousand Island dressing, and caraway seeds (optional).
- Add well drained sauerkraut to dressing mix with a fork until well coated.
- Place 3/4 of the sauerkraut mix into the prepared casserole dish spreading evenly.
- Add diced corned beef or pastrami over the sauerkraut.
- Top mix with shredded Swiss cheese.
- In a small bowl add the butter to the bred crumbs and gently mix with a fork until well incorporated.
- Sprinkle bread crumbs over the Reuben casserole and bake for 20-25 minutes or until cheese is melted and bubbly.
- Remove from oven, cool and add chopped parsley if desired.
Notes
- For easier serving, you may want to cut the sauerkraut into smaller bite size pieces.
- Drain sauerkraut in a colander, then squeeze between paper towels removing as much moisture as possible.
