Easy Roasted Pork Shoulder (Extra Tender)

Ingredients

  • 5 garlic cloves minced
  • 2 tbsp fresh Rosemary chopped
  • 1/4 cup oil olive or avocado
  • 3 tbsp Dijon mustard
  • 2 tbsp kosher salt
  • 1 tbsp ground black pepper
  • 5 lb pork shoulder

Instructions

  1. In a medium size bowl, combine together garlic, rosemary, oil, Dijon mustard, salt and pepper.
  2. Cut off any excess fat from pork shoulder. Rub marinade you created on all sides of shoulder. Place it in a bag or in a large bowl covered with a plastic wrap, allow to marinate for at least 8 hours, but up to 24 hours.
  3. Preheat oven to a low broil. Place pork in a roasting pan. Cook for about 25 minutes or until it's golden.
  4. Wrap pork in foil, adjust temperature to 300°F and cook for 2 more hours or until internal temperature reaches 180°F.
  5. Remove pork from the oven, allow it to rest for at least 25 minutes before cutting into it. Enjoy!
