Ingredients

  • 1 lb. ground Italian sausage
  • 2 cups sweet yellow onion diced
  • 2 cups red bell pepper diced
  • 5 garlic cloves minced
  • 1 tablespoon kosher salt
  • 1 tablespoon Italian seasoning
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 oz package No Yolks Kluski or Dumplings noodles
  • 10 cups low sodium chicken broth
  • 2 cups fresh spinach chopped

  1. In a large pot over medium heat, brown the italian sausage, breaking it into little pieces as it cooks. When sausage is ¾ cooked, add the onion and red pepper and continue cooking until the sausage is no longer pink, then add the garlic and cook for one minute, or until fragrant.
  2. Stir in the seasonings, then add the No Yolks noodles of choice. Carefully add the chicken broth and stir to combine. Bring the pot to a full boil, then reduce to a simmer and cook for 15-20 minutes, or until the noodles are cooked. Stir in the spinach and serve hot.
