Ingredients
- 1 lb. ground Italian sausage
- 2 cups sweet yellow onion diced
- 2 cups red bell pepper diced
- 5 garlic cloves minced
- 1 tablespoon kosher salt
- 1 tablespoon Italian seasoning
- 2 teaspoons dried basil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 oz package No Yolks Kluski or Dumplings noodles
- 10 cups low sodium chicken broth
- 2 cups fresh spinach chopped
Instructions
- In a large pot over medium heat, brown the italian sausage, breaking it into little pieces as it cooks. When sausage is ¾ cooked, add the onion and red pepper and continue cooking until the sausage is no longer pink, then add the garlic and cook for one minute, or until fragrant.
- Stir in the seasonings, then add the No Yolks noodles of choice. Carefully add the chicken broth and stir to combine. Bring the pot to a full boil, then reduce to a simmer and cook for 15-20 minutes, or until the noodles are cooked. Stir in the spinach and serve hot.
