Easy Sheet Pan Chicken Fajitas

This quick and easy sheet pan dinner is perfect for busy weeknights. With tender chicken, flavorful spices, and colorful peppers and onions, these Chicken Fajitas are sure to be a family favorite

Ingredients

  • 2 chicken breasts large, sliced into 1/2 inch slices
  • 1 yellow onion sliced
  • 3 bell peppers de-seeded and sliced
  • 2 tablespoon oil avocado, canola, or olive oil
  • juice of one large lime
  • 6-8 tortillas
  • 3 tablespoon fajita seasoning

Instructions

  1. Preheat oven to 425 degrees.
  2. Cut the bell peppers and onions into slices and add to the baking sheet.
  3. Cut chicken into 1/2 inch slices and add to the baking sheet.
  4. Pour on the oil and sprinkle the seasoning on top evenly. Toss with your hands until everything is well coated. Spread into an even layer. Add additional seasoning if desired.
  5. Place baking sheet into preheated oven and bake for 10 minutes. Remove from oven to toss everything before placing back into oven to cook another 15-20 minutes, or until chicken is cooked through and veggies are tender.
  6. Remove from oven and squeeze the lime juice over the fajitas. Serve in warmed tortillas with desired toppings.
