Easy Shrimp Ceviche
Easy Shrimp Ceviche is a chilled seafood appetizer featuring diced cooked shrimp marinated in lime and lemon juice with fresh cilantro, red onion, tomato, and avocado. Ingredients
- 1 pound Shrimp cooked, peeled, and deveined, raw
- 1/4 cup lime juice
- 1/4 cup lemon juice
- 1/4 cup cilantro chopped, fresh
- 1/4 cup red onion diced
- 2 Roma tomato diced
- 1 avocado diced
- pinch salt
Instructions
- Cut the shrimp into 1/4 inch pieces and transfer to a large mixing bowl.
- Pour in lime juice and lemon juice. Cover and let marinate 30 minutes.
- Stir in cilantro, red onion, tomato, and avocado. Season with a pinch of salt, or to taste. Serve chilled.
Notes
- Add 1 cup diced cucumber for additional crunch in the ceviche if preferred.
- Adjust spiciness by adding up to one minced jalapeño when mixing ingredients.
- To use raw shrimp, increase citrus juice to 1 cup total and marinate in the refrigerator for 60 to 90 minutes until shrimp turns pink and opaque.
- Cover and chill ceviche before serving to enhance flavor melding and refreshment.
