Description

For preparing raw shrimp ceviche, double the citrus juice and marinate longer (60 to 90 minutes) until the shrimp turns opaque and pink, letting the citrus "cook" the shrimp naturally.
Ingredients
- 1 pound Shrimp cooked, peeled, and deveined, raw
- 1/4 cup lime juice
- 1/4 cup lemon juice
- 1/4 cup cilantro chopped, fresh
- 1/4 cup red onion diced
- 2 Roma tomato diced
- 1 avocado diced

Instructions
- Cut the shrimp into 1/4 inch pieces and transfer to a large mixing bowl.
- Pour in lime juice and lemon juice. Cover and let marinate 30 minutes.
- Stir in cilantro, red onion, tomato, and avocado. Season with a pinch of salt, or to taste. Serve chilled.
Notes
- Add 1 cup diced cucumber for additional crunch in the ceviche if preferred.
