  • 1 pound Shrimp cooked, peeled, and deveined, raw
  • 1/4 cup lime juice
  • 1/4 cup lemon juice
  • 1/4 cup cilantro chopped, fresh
  • 1/4 cup red onion diced
  • 2 Roma tomato diced
  • 1 avocado diced
  • pinch salt

Instructions

  1. Cut the shrimp into 1/4 inch pieces and transfer to a large mixing bowl.
  2. Pour in lime juice and lemon juice. Cover and let marinate 30 minutes.
  3. Stir in cilantro, red onion, tomato, and avocado. Season with a pinch of salt, or to taste. Serve chilled.

Notes

  • Add 1 cup diced cucumber for additional crunch in the ceviche if preferred.
  • Adjust spiciness by adding up to one minced jalapeño when mixing ingredients.
  • To use raw shrimp, increase citrus juice to 1 cup total and marinate in the refrigerator for 60 to 90 minutes until shrimp turns pink and opaque.
  • Cover and chill ceviche before serving to enhance flavor melding and refreshment.
