Easy Shrimp Pasta Salad

Ingredients

For the pasta salad:
  • 12 ounces farfalle pasta or your favorite pasta
  • 1 pound Shrimp cooked
  • 1 cup Parmesan Cheese shredded
  • 1/2 cup dill fresh
For the lemon dressing:
  • 1/2 cup olive oil
  • 1/3 cup lemon juice from 2 large lemons
  • 1 tablespoon honey
  • 1/2 teaspoon Dijon mustard
  • 2 cloves garlic minced
  • black pepper to taste
  • kosher salt to taste

Instructions

  1. Bring a large pot of water to boil, salt the water generously. Cook the pasta according to package instructions.
  2. While the pasta is cooking, make the dressing. In a small bowl or jar, whisk together the olive oil, lemon juice, honey, mustard, garlic, salt and pepper. Set aside.
  3. When the pasta is done cooking, drain and run cold water over the pasta.
  4. Place pasta in a large bowl and add cooked shrimp, fresh dill, and Parmesan cheese.
  5. Pour dressing over the salad and toss until well coated. Serve.
