Easy Shrimp Pasta Salad
Description
Easy Shrimp Pasta Salad brings together cooked shrimp and bowtie-shaped pasta coated in a lemon-based dressing. Fresh dill adds a hint of herbal brightness while shredded Parmesan cheese contributes richness and slight nuttiness. The tangy dressing is made by whisking olive oil, freshly squeezed lemon juice, a touch of honey for sweetness, Dijon mustard for slight sharpness, and minced garlic.
The combination results in a salad that is both refreshing and satisfying with contrasting textures: the tender shrimp, al dente pasta, and the crisp bite of fresh dill. The olive oil and lemon dressing keeps the flavors lively but not overwhelming, making it a good choice for serving cold or at room temperature.
Serve this salad as a standalone light lunch or dinner, or use it as a side dish for grilled meats or vegetables. It also works as a potluck contribution when easy-to-serve chilled dishes are desired. The lemon dressing provides enough acidity to balance the creamy notes from the cheese and the sweetness of the shrimp.
