Easy Spanish Cauliflower Rice with Salsa
This Easy Spanish Cauliflower Rice uses finely processed cauliflower as a low-carb rice substitute, cooked with chili powder, cumin, onion, and garlic powders, then combined with chunky salsa. The sautéed cauliflower absorbs the salsa flavor, producing a colorful, savory dish with a mild spice and fresh zest, suitable as a side or light meal.
Ingredients
- 1 head cauliflower of
- 1 cup salsa chunky
- 1 teaspoon chili powder
- 1 teaspoon cumin
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
Instructions
- Chop cauliflower into chunks.
- Place cauliflower in a food processor, and let it run until the cauliflower has been diced up. It will look like rice.
- Heat a non stick or pan coated with cooking spray.
- Add cauliflower and spices and saute for 5 minutes.
- Add salsa to cauliflower and cook for 5 more minutes. Or until salsa has been absorbed.
Notes
- Pulse cauliflower just enough to resemble rice and avoid creating a paste.
- Cook until salsa is absorbed to meld flavors without excess liquid.
