Easy Spanish Cauliflower Rice with Salsa
Description
The recipe begins by pulsing cauliflower into small, rice-like pieces in a food processor, taking care not to overprocess to avoid a paste. The seasoned cauliflower is sautéed briefly in a lightly oiled pan, incorporating chili powder, cumin, onion, and garlic powders to develop a warm, earthy flavor base.
After initial sautéing, chunky salsa is stirred in and cooked until absorbed, melding the fresh tomato and pepper flavors with the spiced cauliflower 'rice.' The result is a vibrant, textured dish reminiscent of traditional Spanish rice, but lighter and grain-free, featuring distinct bites of sautéed cauliflower with zesty salsa notes.
The dish serves well as a side or base for other proteins and can be adjusted for spiciness by salsa choice. Avoid overprocessing the cauliflower to maintain an ideal rice-like texture and prevent mushiness.
