  • 1 head cauliflower of
  • 1 cup salsa chunky
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder

Instructions

  1. Chop cauliflower into chunks.
  2. Place cauliflower in a food processor, and let it run until the cauliflower has been diced up. It will look like rice.
  3. Heat a non stick or pan coated with cooking spray.
  4. Add cauliflower and spices and saute for 5 minutes.
  5. Add salsa to cauliflower and cook for 5 more minutes. Or until salsa has been absorbed.

Notes

  • Pulse cauliflower just enough to resemble rice and avoid creating a paste.
  • Cook until salsa is absorbed to meld flavors without excess liquid.
