Easy Steak Fajitas
Easy Steak Fajitas combine marinated flank steak with grilled onions and yellow bell peppers for a tasty Tex-Mex meal. The marinade, featuring apple ale, garlic scapes, cumin, salt, and pepper, tenderizes and flavors the beef. Ingredients
For the Beef
- 1 1/2 lb. flank steak skirt or sirloin, Certified Angus Beef
- 1/2 cup apple ale Redd's brand
- 3 garlic scapes or 3 garlic cloves
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
For the Fajitas
- 1 onion
- 1 yellow bell pepper
- 1 Tablespoon olive oil
- 4 flour tortillas
- 1/2 avocado
- 1 lime
- 1/2 cup salsa
Instructions
- To marinade the beef mix the Apple Ale with the cumin, salt, pepper and garlic scapes. Add to a ziploc bag with the beef.
- Marinade in the refrigerator for 1-6 hours.
- Preheat the grill to medium.
- Slice the onion and yellow pepper and wrap in foil with a tablespoon of olive oil.
- Place the beef and onion/pepper packet on the grill and cook until the beef reaches the desired temperature, flipping once.
- Serve the beef, peppers and onions with tortillas, lime, avocado and salsa.
