For the Beef

  • 1 1/2 lb. flank steak skirt or sirloin, Certified Angus Beef
  • 1/2 cup apple ale Redd's brand
  • 3 garlic scapes or 3 garlic cloves
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

For the Fajitas

  • 1 onion
  • 1 yellow bell pepper
  • 1 Tablespoon olive oil
  • 4 flour tortillas
  • 1/2 avocado
  • 1 lime
  • 1/2 cup salsa

Instructions

  1. To marinade the beef mix the Apple Ale with the cumin, salt, pepper and garlic scapes. Add to a ziploc bag with the beef.
  2. Marinade in the refrigerator for 1-6 hours.
  3. Preheat the grill to medium.
  4. Slice the onion and yellow pepper and wrap in foil with a tablespoon of olive oil.
  5. Place the beef and onion/pepper packet on the grill and cook until the beef reaches the desired temperature, flipping once.
  6. Serve the beef, peppers and onions with tortillas, lime, avocado and salsa.
