Ingredients
sugar-free crust
- 1 cup almond flour
- ½ cup coconut flour
- 1 tsp xanthan gum
- 1 pinch salt
- lemon zest from ½ lemon
- 8 tbsp butter cold and cubed
- 4 oz cream cheese
- 2 tsp vinegar
- 1 egg
- Egg wash from one egg to brush over

- ½ cup mascarpone cheese
- 2 cups fresh strawberries thinly sliced
- lemon juice and zest from ½ lemon
- 1 tsp vanilla extract
- 2 tsp sweetener
- Whipped Cream for topping, optional
Instructions
- Add almond flour, coconut flour, xanthan gum, lemon zest, and salt to a food processor. Pulse until combined, adding in butter, cream cheese vinegar and egg. Continue to pulse until it is about to form a ball. Pat into a round and place in cling film. Refrigerate for at least an hour.
- Preheat oven to 400 degrees F.
- In a medium bowl, mix strawberries with lemon zest, juice, sweetener, and vanilla extract.
- Roll out pie crust between two sheets of parchment paper into a circular shape.
- Spread mascarpone cheese into the center of the crust. Arrange the strawberries over the mascarpone cheese and fold in the edges.
- Brush with egg wash and bake for 25 minutes, until fully golden. Serve warm or at room temperature with whipped cream, if desired.
