sugar-free crust

  • 1 cup almond flour
  • ½ cup coconut flour
  • 1 tsp xanthan gum
  • 1 pinch salt
  • lemon zest from ½ lemon
  • 8 tbsp butter cold and cubed
  • 4 oz cream cheese
  • 2 tsp vinegar
  • 1 egg
  • Egg wash from one egg to brush over

  • ½ cup mascarpone cheese
  • 2 cups fresh strawberries thinly sliced
  • lemon juice and zest from ½ lemon
  • 1 tsp vanilla extract
  • 2 tsp sweetener
  • Whipped Cream for topping, optional

Instructions

  1. Add almond flour, coconut flour, xanthan gum, lemon zest, and salt to a food processor. Pulse until combined, adding in butter, cream cheese vinegar and egg. Continue to pulse until it is about to form a ball. Pat into a round and place in cling film. Refrigerate for at least an hour.
  2. Preheat oven to 400 degrees F.
  3. In a medium bowl, mix strawberries with lemon zest, juice, sweetener, and vanilla extract.
  4. Roll out pie crust between two sheets of parchment paper into a circular shape.
  5. Spread mascarpone cheese into the center of the crust. Arrange the strawberries over the mascarpone cheese and fold in the edges.
  6. Brush with egg wash and bake for 25 minutes, until fully golden. Serve warm or at room temperature with whipped cream, if desired.
