Ingredients

  • 1 cup fresh strawberries cup finely chopped
  • 8 oz cream cheese softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 1 ½ cups white chocolate chips
  • 1 tbsp coconut oil (optional for smoothness)
  • ½ cup crushed graham crackers (optional, for coating)

  1. In a bowl, mix chopped strawberries and cream cheese until smooth.
  2. Gradually add powdered sugar and vanilla extract, mixing until fully incorporated.
  3. Shape the mixture into small balls using your hands or a spoon and chill in the fridge for 30 minutes.
  4. In a heatproof bowl, melt white chocolate and coconut oil in the microwave in 30-second intervals, stirring in between.
  5. Dip the chilled truffles into the melted white chocolate and coat completely. Roll them in crushed graham crackers if desired.
  6. Place on a parchment-lined baking sheet and chill again until the chocolate is set.
