Ingredients
- 1 lb ground beef or turkey
- 1 cup uncooked rice (white or brown)
- 3 bell peppers (any color) diced
- 1 medium onion chopped
- 3-4 garlic cloves minced
- 1 can Rotel, diced tomatoes and green chilies with juice
- 1 cup tomato sauce
- 1 cup shredded mozzarella or cheddar cheese
- 1 cup beef or chicken broth

- 2 tsp Italian seasoning
- salt and pepper to taste
- parsley or cilantro optional, for garnish
Instructions
- Cook the Meat: In a large skillet over medium-high heat, cook the ground beef or turkey until browned. Break it into crumbles as it cooks. Drain any excess fat if necessary.
- Add in the Veggies: Add the diced bell peppers, chopped onion, and minced garlic to the skillet. Sauté for about 3-4 minutes until the vegetables start to soften.
- Combine the Rice and Seasonings: Mix in the uncooked rice, canned tomatoes and green chilies (with juice), tomato sauce, broth, and Italian seasoning; season with salt and pepper to taste.
- Cook the Rice: Bring the mixture to a simmer. Once it’s simmering, cover and cook for about 20 minutes, or until the rice is cooked through and has absorbed most of the liquid.
- Add Cheese: Remove the lid and stir in the cheese until melted and creamy.
- Garnish and Serve: Serve hot, garnished with fresh parsley or cilantro if desired. Enjoy!
