Easy Stuffed Peppers Recipe

Easy stuffed peppers are a family favorite and packed with hearty Ground Beef and amazing flavor. They also make a great first food for growing little ones.

Ingredients

  • 1 pound ground beef
  • 6 bell peppers see note
  • 1 ½ cups rice cooked
  • ⅓ cup breadcrumbs
  • 1 egg
  • 15 oz diced tomatoes
  • ⅓ cup onions diced
  • 2 tablespoons garlic minced
  • ½ teaspoon sage ground
  • ½ teaspoon thyme leaves
  • ¼ teaspoon oregano
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • ¾ cup cheddar cheese shredded

Instructions

  1. Preheat oven to 350ºF.
  2. In a large bowl, combine Ground Beef, cooked rice, onion, garlic, spices, tomatoes, breadcrumbs, and egg until well mixed.
  3. Slice the tops off of the peppers, leaving as wide of an opening as possible. Clean out the insides.
  4. Place peppers upright in a greased 9x13 pan.
  5. Fill with Ground Beef mixture.
  6. Cover with foil and bake for 50 minutes.
  7. Uncover, top with cheese, and bake an additional 10 minutes, until a meat thermometer registers 165ºF.

Notes

  • You can use any kind of bell pepper you prefer. Choose peppers that are wide with a flat base. They will stand up better in the pan.
