Not only are they egg-free, but they're also much simpler to make than you might imagine. The result is an incredibly flavorful homemade dish that’s perfect for the fall season. Ingredients
- 2 lbs fresh whole sweet potatoes or yams
- 1 ⅓ cups finely grated Parmesan cheese such as Parmigiano Reggiano or Grana Padano
- 1 ¼ cups all-purpose flour
- ¼ teaspoon freshly grated nutmeg
- ½ teaspoon ground cinnamon
- ½ teaspoon kosher salt
Notes
- Use freshly grated, good quality parmesan cheese for best results.
- When cooking frozen gnocchi, do not defrost first. Place frozen gnocchi straight from the freezer into boiling water.
- Don't add oil to the water when boiling the gnocchi. The starch from the potatoes is enough to keep them from sticking together, and oil will prevent the gnocchi from clinging to the sauce.
- Don't overcrowd the pot when boiling the gnocchi, as this can also cause them to stick together or cook unevenly. Work in batches if making more than 4 servings at a time.
- Reserve some of the gnocchi cooking water to add to whatever sauce you toss them with in order to help it thicken and cling to the gnocchi.
