Easy Taco Caserole
This Easy Taco Casserole combines ground beef, black beans, and a blend of cheeses layered with crunchy tortilla chips for a hearty and comforting meal. The taco seasoning adds a familiar, moderate spice level that complements the savory beef and veggies. Baking the assembled casserole melts the cheese and softens the chips slightly, creating a pleasing contrast of textures. This dish can be garnished with fresh toppings like lettuce, tomato, avocado, sour cream, and cilantro to add brightness and freshness to each bite.
Ingredients
- 1 1/4 pounds ground beef (or ground chicken or ground turkey)

- 1/2 cup green bell pepper chopped
- 2 cups cheddar cheese divided, shredded
- 3 tablespoons taco seasoning (1 envelope)
- 1/2 cup beef broth (or water)
- 15 ounces black beans (1 can)
- 1 cup tortilla chips broken into small pieces
- 1/2 cup Monterey jack cheese
- lettuce optional toppings, chopped|diced|sliced

Instructions
- Preheat oven to 375 degrees F. Spray the inside of a 1 1/2-2 quart baking dish with cooking spray; set aside.

- Stir in 1 cup cheddar cheese, taco seasoning and broth. Cook and stir until cheese is melted and mixture has thickened, about 3 minutes.
- Remove the skillet from the heat and stir in the black beans, then transfer half of the mixture to the greased baking dish. Spread the tortilla chips in an even layer, then top with the remaining beef mixture.
- Sprinkle the remaining cheese on top and bake, uncovered for 15 to 20 minutes.
- Garnish with your favorite toppings. Serve with sour cream and hot sauce.
Notes
- Store leftovers in an airtight container in the refrigerator and consume within 3-4 days for best quality.
- Reheat leftovers in the microwave or oven, but expect the tortilla chips to lose their original crunch.
- You can freeze the cooked meat mixture separately before assembly; thaw it in the fridge before baking the casserole.
