  • 1 1/4 pounds ground beef (or ground chicken or ground turkey)
  • 1/2 cup red onion chopped
  • 1/2 cup green bell pepper chopped
  • 2 cups cheddar cheese divided, shredded
  • 3 tablespoons taco seasoning (1 envelope)
  • 1/2 cup beef broth (or water)
  • 15 ounces black beans (1 can)
  • 1 cup tortilla chips broken into small pieces
  • 1/2 cup Monterey jack cheese
  • lettuce optional toppings, chopped|diced|sliced
  • tomato
  • avocado
  • sour cream
  • cilantro
  • hot sauce

Instructions

  1. Preheat oven to 375 degrees F. Spray the inside of a 1 1/2-2 quart baking dish with cooking spray; set aside.
  2. In a large skillet set over medium heat, cook beef, onion and green pepper until no longer pink; drain any excess grease.
  3. Stir in 1 cup cheddar cheese, taco seasoning and broth. Cook and stir until cheese is melted and mixture has thickened, about 3 minutes.
  4. Remove the skillet from the heat and stir in the black beans, then transfer half of the mixture to the greased baking dish. Spread the tortilla chips in an even layer, then top with the remaining beef mixture.
  5. Sprinkle the remaining cheese on top and bake, uncovered for 15 to 20 minutes.
  6. Garnish with your favorite toppings. Serve with sour cream and hot sauce.
