Ingredients

Egg bites base
  • 8 large egg
  • 1/4 cup prepared ranch dressing
  • 1 tsp garlic salt
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
Fillings
  • 3/4 cup finely chopped spinach fresh
  • 1/2 cup Bacon crumbled cooked
  • 1/4 cup Pico de Gallo

Instructions

Prepare

  1. Preheat oven to 425°F and spray a muffin pan with nonstick cooking spray. Alternately, you can grease the muffin pan with softened butter.
Combine
  1. In a large bowl, add eggs, ranch dressing, garlic salt, onion powder, black pepper, spinach, bacon, and pico de gallo.
  2. Whisk together until well combined.
Bake
  1. Pour egg mixture into prepared muffin pan, filling each well about 2/3 full.
  2. Bake in preheated oven for about 15 minutes, or until a toothpick inserted in the center comes out clean. Egg bites will be puffed up a bit.
Serve
  1. Remove the pan from the oven and let the egg bites cool in the pan for a few minutes.
  2. Use a knife to gently loosen the edges, then remove the egg bites from the muffin pan.
  3. Serve warm, or cool and store in the refrigerator for 3-4 days, or in the freezer for 3 months.

Notes

  • This recipe yields 12 egg bites; divide servings as desired based on appetite or needs.
  • The combined fillings total about 1 1/2 cups but can be changed to your favorite ingredients.
