Easy tomato salad

Easy tomato salad with capers, herbs and a simple lemon olive oil dressing is the perfect way to use juicy, ripe tomatoes.

Ingredients

  • 6 ripe tomatoes
  • 1 red onion thinly sliced
  • ½ cup capers
  • ¼ cup freshparsley
  • ¼ cup fresh basil
For the dressing
  • 3 tbsp olive oil
  • 3 tbsp lemon juice / red wine vinegar
  • ½ tsp black pepper
  • 1 tsp salt

Instructions

  1. Slice the tomatoes into chunks or wedges, to your own preference and place in a bowl.
  2. Add the capers and red onion.
  3. Roughly chop the herbs and add to the bowl.
  4. Whisk together all the dressing ingredients then pour over the salad. Allow to stand for 5-10 minutes then serve.
