Easy Turkey Tenderloin

How to cook turkey tenderloin in oven with a few veggies and only 10 minutes of prep, resulting in a juicy, tender and flavorful meal!

Ingredients

  • 1 tablespoon olive oil plus more for coating
  • 1 cup carrots sliced (1/4-inch)
  • 1/2 cup yellow onion thinly sliced
  • 1/2 cup sweet red pepper
  • 1 pound Turkey tenderloin
  • salt and pepper to taste
  • 1/2 cup white wine
  • 1/2 cup chicken broth
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried rosemary crushed

  1. Preheat oven to 400 degrees F. Coat a large baking dish with olive oil. Place vegetables on bottom of dish and drizzle with olive oil, tossing to coat. Sprinkle the turkey with salt and pepper to taste, then place in the baking dish. In a separate bowl, stir together wine, broth, and seasonings; pour over tenderloin. 
  2. Cover dish with foil and roast 30-40 minutes until turkey reaches 160 degrees F in thickest part. Then turn on high broiler for 4-5 minutes until browned to your liking.

Notes

  • Refrigerate turkey within two hours and store in the refrigerator for up to 3 days.
