Easy Vegan Alfredo Sauce

Ingredients

  • 1 cup raw cashews
  • 2 tablespoons lemon juice approx. half of a large lemon
  • ¾ cup hot water
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ⅛ teaspoon dried thyme
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
Optional Garnish
  • Vegan Parmesan Cheese

Instructions

  1. Add all your ingredients to a powerful blender and process on high until smooth and creamy. Continue processing to ensure there are no loose cashew bits. Add 2-3 tablespoons of vegan parmesan cheese if desired.
  2. Serve with your favourite noodles or veggies.

Notes

  •  
  • Leftover sauce keeps refrigerated for 4-5 days, or freeze in freezer safe containers for up to 3 months.
  • Use hot water so you won't need to heat up the sauce in a pan later.
  • If you don't have a strong blender soak your cashews in boiling hot water for 20-30 minutes to soften them. Then drain them and blend with the remaining ingredients.
  • If you can't have cashews or nuts use sunflower seeds with similar results.
