Easy Walking Tacos with Fritos (Frito Pie Recipe)

Ingredients

  • 2 tbsp olive oil
  • 1 small onion finely diced
  • 1 red bell pepper finely diced
  • 2 tbsp taco seasoning
  • 1 pound ground beef
  • 1 large bag Fritos
  • 1 pouch (8.8 oz) Spanish Style Ready Rice
  • 1 cup shredded iceberg lettuce
  • 1 cup salsa
  • 1 can black olives sliced
  • 1 cup shredded Monterey jack cheese
  • ½ cup sour cream

Instructions

  1. Heat oil in a large skillet over medium-high heat. Saute onion and pepper for 5 minutes or until softened. Add taco seasoning, salt and pepper; cook for 1 minute. Add ground beef and cook until browned. 
  2. Into a large baking dish place the fritos and cover with the ground beef mixture.
  3. Add the cooked Ready Rice, then the shredded lettuce, salsa, and black olives.
  4. Top with the shredded cheese and sour cream. Serve immediately with any other toppings of choice.
