Ingredients
- 2 tbsp olive oil
- 1 small onion finely diced
- 1 red bell pepper finely diced
- 2 tbsp taco seasoning
- 1 pound ground beef
- 1 large bag Fritos
- 1 pouch (8.8 oz) Spanish Style Ready Rice
- 1 cup shredded iceberg lettuce
- 1 cup salsa
- 1 can black olives sliced
- 1 cup shredded Monterey jack cheese
- ½ cup sour cream
Instructions
- Heat oil in a large skillet over medium-high heat. Saute onion and pepper for 5 minutes or until softened. Add taco seasoning, salt and pepper; cook for 1 minute. Add ground beef and cook until browned.
- Into a large baking dish place the fritos and cover with the ground beef mixture.
- Add the cooked Ready Rice, then the shredded lettuce, salsa, and black olives.
- Top with the shredded cheese and sour cream. Serve immediately with any other toppings of choice.
