Ingredients
- 1-½ cups white whole wheat flour or whole wheat flour , spooned into a measuring cup and leveled-off
- ¼ cup milled flax seeds or white whole wheat flour
- ½ teaspoon ground cinnamon
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ¼ teaspoon kosher salt
- ½ cup honey or maple syrup
- 2 large eggs , room temperature
- ⅓ cup avocado oil, Expeller-Pressed Sunflower Oil or vegetable oil
- 1 tablespoon pure vanilla extract
- 1 tablespoon fresh lemon juice
- ⅓ cup sour cream (preferably full-fat , or whole Milk
- 1 cup very ripe mashed bananas , about 2 to 3 bananas
Honey Glaze:
- ¼ cup honey
- ¼ cup water
- ½ teaspoon pure vanilla extract
Instructions
- Preheat the oven to 350 °F (176.67 °C) and set an oven rack in the middle position. Line a 9×5-inch loaf pan with parchment paper or grease with non-stick cooking spray.
- In a medium bowl, whisk together the whole wheat flour, milled flax seeds, cinnamon, baking powder, and baking soda. Set aside.
- In a large bowl, whisk together the honey, eggs, oil, and vanilla extract. Add the sour cream, lemon juice, and mashed banana and whisk until smooth.
- Using a rubber spatula, fold the dry ingredients into the wet ingredients until combined (do not over-mix). Pour the batter into the prepared loaf pan.
