Ingredients

  • 3 Tablespoons vegetable oil
  • 1 medium yellow onion diced
  • 9 garlic minced, cloves
  • 1 Tablespoon ginger fresh, grated
  • ½ Tablespoon Coriander
  • ½ Tablespoon cumin
  • 2 teaspoons Turmeric
  • 1 ½ cups yellow lentils
  • 4 cups vegetable broth
  • rice optional, cooked, for serving
  • cilantro optional, for garnish

Instructions

  1. In a large pan over medium-high heat, heat the oil. Add the onions and saute until the onions become tender and translucent.
  2. Add garlic, ginger, and spices and cool for 30 seconds, making sure nothing burns.
  3. Add lentils and broth and cook covered until lentils are soft, about 30 minutes. Stir occasionally.
  4. Serve over rice.

Notes

  • Toast older or less fragrant spices in a pan for 2 minutes before cooking to revive their aroma.
  • Serve yellow dal over cooked rice or with fresh naan bread for a complete meal.
  • This dal freezes well; consider making a double batch to store portions for easy future meals.
