Easy Yellow Dal is a lentil stew made by simmering yellow lentils with a flavorful base of sauteed onions, garlic, ginger, and spices like turmeric, cumin, and coriander. The result is a comforting dish with soft-textured lentils and fragrant spices that pair well with cooked rice or naan bread for a satisfying meal.
Ingredients
- 3 Tablespoons vegetable oil
- 1 medium yellow onion diced
- 9 garlic minced, cloves
- 1 Tablespoon ginger fresh, grated
- ½ Tablespoon Coriander
- ½ Tablespoon cumin
- 2 teaspoons Turmeric
- 1 ½ cups yellow lentils
- 4 cups vegetable broth
- rice optional, cooked, for serving
- cilantro optional, for garnish
Instructions
- In a large pan over medium-high heat, heat the oil. Add the onions and saute until the onions become tender and translucent.
- Add garlic, ginger, and spices and cool for 30 seconds, making sure nothing burns.
- Add lentils and broth and cook covered until lentils are soft, about 30 minutes. Stir occasionally.
- Serve over rice.

- Toast older or less fragrant spices in a pan for 2 minutes before cooking to revive their aroma.
