Ingredients
- 1 lice bread of choice
- 1 large egg
- ½ Tablespoon grass-fed butter ghee, or a drizzle of olive oil
- salt and pepper to taste
Instructions
- Use a small round cookie cutter, the rim of shot glass or a knife to cut a hole in the center of the bread (about 2 inches wide).
- Heat a non-stick skillet or griddle over medium heat. Add the butter, ghee, or olive oil and let it melt to coat the pan.
- Place the bread (and the cut-out piece) in the skillet and toast for about 1 minute, until lightly browned on the bottom.
- Crack the egg into the hole in the bread. Cook for 2-3 minutes until the egg white begins to set. Add salt and pepper to taste. We don’t add pepper for the kids.
- Carefully flip the bread with the egg and cook for an additional 1-2 minutes, or until the egg is cooked to your preferred doneness. We like ours runny.
- Transfer to a plate and serve.
