Ingredients

  • 1 lice bread of choice
  • 1 large egg
  • ½ Tablespoon grass-fed butter ghee, or a drizzle of olive oil
  • salt and pepper to taste

Instructions

    Cup of Yum
  1. Use a small round cookie cutter, the rim of shot glass or a knife to cut a hole in the center of the bread (about 2 inches wide).
  2. Heat a non-stick skillet or griddle over medium heat. Add the butter, ghee, or olive oil and let it melt to coat the pan.
  3. Place the bread (and the cut-out piece) in the skillet and toast for about 1 minute, until lightly browned on the bottom.
  4. Crack the egg into the hole in the bread. Cook for 2-3 minutes until the egg white begins to set. Add salt and pepper to taste. We don’t add pepper for the kids.
  5. Carefully flip the bread with the egg and cook for an additional 1-2 minutes, or until the egg is cooked to your preferred doneness. We like ours runny.
  6. Transfer to a plate and serve.
