Egg Roll in a Bowl

Just like your favorite take-out, this one-skillet Egg Roll in a Bowl is a great way to enjoy Chinese food at home without all the carbs!

Ingredients

  • 2 tablespoons olive oil divided
  • 1 pound ground pork or ground turkey
  • salt & pepper
  • 1 large yellow onion diced
  • 3 carrots peeled and grated
  • 3 cloves garlic minced
  • 1 tablespoon ginger peeled and minced
  • ½ cup chicken broth
  • 1 head green cabbage shredded
  • ¼ cup apple cider vinegar
  • 2 tablespoons sesame oil
  • ¼ teaspoon red pepper flakes (optional)
  • toasted sesame seeds for garnish
  • green onion thinly sliced, for garnish

Instructions

  1. Place 1 tablespoon olive oil in a large skillet and add ground pork. Season with salt and pepper and cook pork until almost done, about 7 minutes. Remove the pork and set it aside in a bowl.
  2. Add more olive oil (if needed) and onions. Saute until onions are translucent, about 5 minutes. Add carrots, garlic, ginger, and broth to the skillet. Cook for 3 minutes.
  3. Add pork back into the pan along with the cabbage, apple cider vinegar, sesame oil, and red pepper flakes (if using). Stir everything together.
  4. Put a lid on the skillet and cook until the cabbage is wilted and tender, about 10 minutes.
  5. Taste cabbage and adjust seasoning with salt and pepper as needed.
  6. Serve warm with green onions and toasted sesame seeds on top.

Notes

  • Toast sesame seeds by adding them to a small skillet over medium heat. Cook for 3-5 minutes, stirring often, until lightly browned and nutty. Transfer to a bowl and let cool.
