Egg Roll in a Bowl

Just like your favorite take-out, this one-skillet Egg Roll in a Bowl is a great way to enjoy Chinese food at home without all the carbs!

Ingredients
- 2 tablespoons olive oil divided
- 1 pound ground pork or ground turkey
- salt & pepper
- 1 large yellow onion diced
- 3 carrots peeled and grated
- 3 cloves garlic minced
- 1 tablespoon ginger peeled and minced
- ½ cup chicken broth
- 1 head green cabbage shredded
- ¼ cup apple cider vinegar
- 2 tablespoons sesame oil
- ¼ teaspoon red pepper flakes (optional)
- toasted sesame seeds for garnish
- green onion thinly sliced, for garnish

Instructions
- Place 1 tablespoon olive oil in a large skillet and add ground pork. Season with salt and pepper and cook pork until almost done, about 7 minutes. Remove the pork and set it aside in a bowl.
- Add more olive oil (if needed) and onions. Saute until onions are translucent, about 5 minutes. Add carrots, garlic, ginger, and broth to the skillet. Cook for 3 minutes.
- Add pork back into the pan along with the cabbage, apple cider vinegar, sesame oil, and red pepper flakes (if using). Stir everything together.
- Put a lid on the skillet and cook until the cabbage is wilted and tender, about 10 minutes.
- Taste cabbage and adjust seasoning with salt and pepper as needed.
- Serve warm with green onions and toasted sesame seeds on top.
Notes
- Toast sesame seeds by adding them to a small skillet over medium heat. Cook for 3-5 minutes, stirring often, until lightly browned and nutty. Transfer to a bowl and let cool.
