Eggnog Cookies Recipe

Everyone loves these soft and tasty Eggnog Cookies with hints of cinnamon, nutmeg and vanilla. These cookies are also topped with an eggnog glaze and are perfect for the holidays.

Ingredients

  • 3/4 cup unsalted butter at room temperature
  • 1 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1/2 cup eggnog
  • 2 egg yolks
  • 2 ¼ cups all-purpose flour
  • 1 1/2 teasppons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
Glaze:
  • 1 1/2 cups powdered sugar sifted
  • 3-4 tablespoons eggnog
  • ½ teaspoon vanilla
  • Dash of cinnamon

Instructions

  1. Preheat oven to 350 degrees.
  2. In a stand mixer, add butter and sugar and cream together. Add vanilla and eggnog and mix until incorporated. Add egg yolks and mix until fluffy.
  3. In a medium bowl, whisk together flour, baking powder, salt, cinnamon and nutmeg.
  4. Add the dry ingredients to the wet ingredients and mix until just combined.
  5. Scoop dough out using a cookie scoop and place onto a greased cookie sheet.
  6. Bake for 10 - 12 minutes or until the edges are lightly golden.
  7. Let cookies cool completely before frosting.
  8. While cookies are cooling, make frosting by mixing together the sifted powdered sugar, eggnog, vanilla and cinnamon.

Notes

  • Store the dough, covered, in the fridge for 1-2 days before baking, or frozen for up to 3 months. See How to Freeze Cookie Dough for tips.
  • Store baked and frosted cookies for 5-7 days in an airtight container on the counter, or store in the freezer for 2-3 months.
