Ingredients

  • 1/2 cup butter , softened
  • 1 cup sugar
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 cup eggnog
  • 2 teaspoons vanilla extract
  • 2 1/2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat oven to 350 degrees and spray a 9x5-inch loaf pan with baking spray.
  2. Add butter and sugar to your stand mixer on medium speed until light and fluffy, about 2 minutes.
  3. Lower the speed to the lowest setting and add the vegetable oil, eggs, eggnog and vanilla extract until smooth.
  4. Sift together the flour, baking powder, salt, nutmeg and cinnamon.
  5. Add to the stand mixer on lowest speed setting until just combined.
  6. Pour into loaf pan and bake for 55-60 minutes, or until a toothpick comes out clean.
  7. Let cool 15 minutes before removing from pan.
