Eggs in a Basket

Ingredients

  • 2 lices of whole-wheat bread
  • 2 tablespoons unsalted butter
  • 2 large eggs
  • salt to taste
  • freshly ground black pepper to taste
  • Freshly chopped chives for garnish

Instructions

  1. Use a cookie cutter or the rim of a glass to cut a hole in the center of each slice of bread.
  2. Spread butter on both sides of the bread slices and the cut-out pieces.
  3. Heat a skillet over medium heat and place the bread slices in the skillet. Crack an egg into each hole and season with salt.
  4. Cook until the egg whites are set, but the yolks are still runny, about 2-4 minutes. Toast the cut-out pieces alongside.
  5. Serve warm. Grind black pepper over top and finish with freshly chopped chives as garnish.
