Ingredients

  • 1 tablespoon olive oil
  • 4 cups corn kernels fresh or frozen (thawed, if frozen)
  • 1/4 cup plain greek yogurt
  • 1/4 cup mayonnaise
  • 1/2 cup crumbled feta cheese or Cotija cheese
  • 2 tablespoons fresh cilantro finely chopped
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon smoked paprika
  • 1 clove garlic minced
  • Salt and freshly ground black pepper to taste

  1. Heat olive oil in a large skillet over medium-high heat. Add corn and cook, stirring occasionally, until corn is golden and begins to char, about 7-10 minutes.
  2. In a large bowl, combine the Greek yogurt, mayonnaise, feta or Cotija cheese, cilantro, lime juice, chili powder, smoked paprika, and minced garlic. Mix until well combined.
  3. Add the cooked corn to the yogurt mixture and stir to combine. Season with salt and pepper to taste. Serve warm or at room temperature with tortilla chips for dipping.
