Ingredients

  • 4 corn husked, ears, fresh
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup cotija cheese crumbled
  • 1/4 cup cilantro finely chopped, fresh
  • 1 teaspoon chili powder
  • salt to taste
  • 1 lime cut into wedges

Instructions

  1. Boil the corn in a large pot of water for 5-7 minutes until tender. Drain and let cool slightly.
  2. Cut the kernels off the cobs and divide them evenly among four cups.
  3. In a small bowl, mix together mayonnaise and sour cream. Spoon this mixture over the corn in each cup.
  4. Sprinkle crumbled cotija cheese and chopped cilantro over the creamy corn.
  5. Season each cup with a pinch of chili powder and salt to taste. Serve with a wedge of lime to squeeze over the top.
