Ingredients

  • 4 ears of corn husks removed
  • 1/4 cup mayonnaise
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder
  • 1/4 cup cotija cheese crumbled
  • 1 tablespoon fresh cilantro finely chopped
  • 1 lime cut into wedges

Instructions

  1. Preheat grill to medium-high heat. Place corn on the grill and cook for about 10 minutes, turning occasionally, until kernels are tender and charred in spots.
  2. While the corn is grilling, in a small bowl, mix together mayonnaise and lime juice.
  3. Remove corn from grill and brush each ear with the mayonnaise mixture. Then sprinkle with chili powder and cotija cheese.
  4. Garnish with chopped cilantro and serve with lime wedges for squeezing over the corn.
