Ingredients

  • 1 tablespoon chili powder
  • 1 tablespoon guajillo chili powder can substitute regular chili powder, or ancho chili powder
  • 1 tablespoon paprika sweet
  • 2 teaspoons chipotle powder (can substitute smoked paprika)
  • 1 tablespoon Parmesan Cheese dried not fresh (comes in canisters at room temp) **see note, grated
  • 2 teaspoons cilantro dried
  • 1 teaspoon cumin ground
  • 1 teaspoon garlic powder
  • 1 teaspoon lime zest see below for instructions, dried
  • 1 teaspoon sugar
  • 1/2 teaspoon kosher salt or sea salt
  • 1/2 teaspoon cayenne pepper

Instructions

  1. To make the lime zest (this can be done days in advance): Preheat the oven to 170-180F/75-80C.Zest one lime, lay the zest out on a plate and stick it in the oven for 15-20 minutes. Remove and let it cool completely, then crumble it up finely with your fingers.
  2. Place all of the ingredients in a bowl or in a jar and stir or shake to thoroughly combine. Store in a glass jar with an airtight lid in the fridge where it will keep for up to a month. At room temperature it should be used within a week. Makes about 1/3 cup seasoning.

Notes

  • Use dehydrated Parmesan cheese from canisters for the blend to maintain the seasoning's shelf life.
  • If storing at room temperature, use the seasoning within one week for best flavor and safety.
  • Refrigerate the seasoning to extend its shelf life up to one month.
