Elote Seasoning Recipe
Description
Elote Seasoning Recipe blends various chili powders, smoked spices, cumin, garlic powder, and dried lime zest, with dried Parmesan cheese and cilantro to create a complex seasoning mix. The dried lime zest is prepared by gently drying fresh lime zest in a low-temperature oven, concentrating its citrus aroma without moisture. This homemade blend can be used on grilled corn, vegetables, or meats to impart the characteristic flavors of elote, a Mexican street food.
The seasoning offers smoky, tangy, and mildly spicy layers, with the parmesan cheese adding a subtle savory note. The recipe advises storing the seasoning blend in the fridge for up to a month to preserve freshness, particularly because of the Parmesan component, which should be dehydrated rather than fresh. Room temperature storage is less stable and should be limited to short-term use of about a week.
By customizing chili powders and seasoning concentrations, this mix can be tailored to individual spice tolerance or flavor preferences, making it versatile for diverse dishes beyond traditional elote.
Ingredients
- 1 tablespoon chili powder
- 1 tablespoon guajillo chili powder can substitute regular chili powder, or ancho chili powder
- 1 tablespoon paprika sweet
- 2 teaspoons chipotle powder (can substitute smoked paprika)
- 1 tablespoon Parmesan Cheese dried not fresh (comes in canisters at room temp) **see note, grated
- 2 teaspoons cilantro dried
- 1 teaspoon cumin ground
- 1 teaspoon garlic powder
- 1 teaspoon lime zest see below for instructions, dried
- 1 teaspoon sugar
- 1/2 teaspoon kosher salt or sea salt
- 1/2 teaspoon cayenne pepper
Instructions
- To make the lime zest (this can be done days in advance): Preheat the oven to 170-180F/75-80C.Zest one lime, lay the zest out on a plate and stick it in the oven for 15-20 minutes. Remove and let it cool completely, then crumble it up finely with your fingers.
- Place all of the ingredients in a bowl or in a jar and stir or shake to thoroughly combine. Store in a glass jar with an airtight lid in the fridge where it will keep for up to a month. At room temperature it should be used within a week. Makes about 1/3 cup seasoning.
Notes
- Use dehydrated Parmesan cheese from canisters for the blend to maintain the seasoning's shelf life.
- If storing at room temperature, use the seasoning within one week for best flavor and safety.
- Refrigerate the seasoning to extend its shelf life up to one month.
