Description

Starting with a mix of butter and sugar creamed together, the batter includes egg and flour mixed to a crumbly dough that is rolled thin (about 1/8") and cut into round biscuit shapes. Baking at 400°F for 8 to 10 minutes until lightly golden ensures a tender yet crisp texture. After cooling, pairs of biscuits are joined with raspberry jam. The tops are coated in a slightly runny confectioners' sugar icing and decorated with candied cherries, adding a colorful traditional finish.

Ingredients

  • 2 ticks butter
  • cups sugar
  • 1 egg
  • 3 ½ cups all-purpose flour
  • 2 cups confectioners sugar
  • 20 candied cherries to decorate
  • 13 oz raspberry jam as needed

Instructions

  1. Preheat oven to 400℉ (200℃)
  2. Mix the butter and sugar together until it forms a homogenous mixture. Add the egg and mix well. Next add the flour until it forms a crumbly consistency. 
  3. Turn onto a floured surface and form into a smooth dough. Do not overwork the dough. Roll out quite thinly (about 1/8") and cut into rounds with a cookie cutter.  
  4. Place on lined baking sheet and bake for 8-10 minutes (I turn them once through baking). Put on cooling rack. Then, when completely cool, choose a mate for each cookie.
  5. Coat the tops with confectioner's sugar mixed with milk or water (to a thick, but runny consistency as in the photo below).
  6. Top with a piece of candied cherry in the center, then sandwich together cookies with raspberry jam and enjoy with a cup of tea!

Notes

  • The quantity of biscuits depends on the cutter size used for shaping.
