Espresso Chocolate Chip Protein Overnight Oats

Ingredients

  • 2/3 cup rolled oats (60 grams)
  • 1 scoop Optimum Nutrition Gold Standard Whey Protein Powder, Vanilla Ice Cream (34 grams)
  • 1 1/2 tbsp mini semi-sweet chocolate chips (21 grams)
  • 1/2 tbsp chia seeds (7 grams)
  • 1/2 tbsp instant espresso
  • 1/2 tsp vanilla extract
  • 3/4 cup unsweetened vanilla almond milk (6 oz)
  • 3 oz espresso or strong brewed coffee
  • 1 tbsp maple syrup (1/2 oz)

Instructions

  1. Whisk almond milk and whey protein until smooth. Add rolled oats, instant espresso, chia seeds, chocolate chips, and vanilla extract and mix until combined.
  2. Add the oat mixture into a resealable container or jar and set aside.
  3. Mix espresso or strong brewed coffee with maple syrup. Pour on top of oat mixture, cover, and refrigerate overnight.
  4. Serve chilled or microwave for 1 to 1 1/2 minutes before serving. Top with whipped cream, if desired.
