Ingredients

  • 8 ripe guavas
  • 1 cup caster sugar
  • 1⅓ oz. egg whites , about 2 to 3 egg whites
For serving
  • Arrope de mora , blackberry syrup
  • Grajeas , small balls or jelly vermicelli of all colors
  • grated coconut

Instructions

  1. Peel the guavas and remove the central part with the seeds.
  2. Cut the pulp into pieces.
  3. Place the pieces of guava pulp in a large bowl.
  4. Add the sugar and mash together with a potato masher until smooth. The use of a blender is also possible.
  5. Transfer the sweetened guava puree to the bowl of a stand mixer and add the egg whites.
  6. Beat together for several minutes until a creamy and stiff consistency is obtained.
  7. Serve the mousse immediately in cups or ice cream cones.
  8. Garnish the top with arrope de mora (blackberry syrup), grajeas (small jelly balls or vermicelli of all colors) and shredded coconut.
