Family-style Costco Chicken Bake

This family-style chicken bake has an easy homemade bread dough with a creamy chicken and bacon filling. It makes enough for the whole family!

Ingredients

Dough
  • 1 tablespoon instant dry yeast
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • 1 1/3 cups warm water approximately 105°F/40°C
  • 2 tablespoons olive oil
  • 3 to 3 1/2 cups all-purpose flour
For the Filling
  • 2 cups shredded cooked chicken
  • 1/2 cup cooked and crumbled bacon
  • 6 ounces cream cheese softened
  • 3/4 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 large egg

  1. In the bowl of a stand mixer, combine 1 tablespoon instant dry yeast, 1 tablespoon brown sugar, 1 teaspoon salt, 1 1/3 cups warm water, 2 tablespoons olive oil, and 3 to 3 1/2 cups all-purpose flour. Knead on low speed until a soft dough ball forms and pulls away from the sides of the bowl. If the dough is sticky, gradually add up to 1/2 cup additional flour.
  2. Transfer the dough to a lightly greased large bowl. Cover and let rise in a warm place for 1 hour, or until doubled in size.
  3. Meanwhile, prepare the filling. In a large mixing bowl, combine 2 cups shredded cooked chicken, 1/2 cup cooked and crumbled bacon, 6 ounces cream cheese, 3/4 cup shredded cheddar cheese, 1 teaspoon salt, 1/2 teaspoon black pepper, and 1/2 teaspoon garlic powder. Stir until well combined.
  4. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  5. Divide the risen dough into 2 equal portions. On a lightly floured surface, roll each portion into a rectangle, approximately 12 x 8 inches.
  6. Spoon half of the filling down the center third of one dough rectangle, leaving a 2-inch border on all sides. Using a knife or bench scraper, make 2-inch slits along both sides of the dough, cutting toward the center. Fold strips over the filling, alternating sides, to form a braid. Pinch ends to seal. Repeat with the second piece of dough and remaining filling.
  7. In a small bowl, beat 1 large egg. Brush the tops of both braids with the beaten egg.
  8. Transfer the braids to the prepared baking sheet. Bake for 15 to 20 minutes, or until golden brown.
  9. Remove from the oven and let cool slightly before slicing. Serve warm.
