Fasolakia (Greek Green Beans)

Fasolakia is a Greek green bean recipe that proves that green beans need not be bland. Tender green beans braised in olive oil and tomato make this a mouthwatering vegetarian and gluten free main or side dish.

Ingredients

  • 1/4 cup olive oil extra virgin
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 russet potato peeled and cubed
  • 1 1/2 lb green beans trimmed and cut into 2 inch pieces (you can also use frozen green beans)
  • 1 15-oz can crushed tomatoes
  • 3/4 cup water
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp oregano
  • 1 lemon juice of

Instructions

  1. Heat the olive oil in a sauté pan or a pot over medium heat. Add the onions and cook until translucent. Add the minced garlic and cook for a couple of minutes.
  2. Add in the potatoes and cook for about 5 minutes. Next, add in the green beans, crushed tomatoes, water, salt, pepper and oregano.
  3. Place the lid on and cook over medium or medium low heat for 30 to 40 minutes, until the potatoes and green beans are tender and fully cooked.
  4. Remove the lid and add the lemon juice. Cook for 5 more minutes, then serve.

Notes

  • You can use frozen green beans instead of fresh ones. 
  • I don't recommend using canned beans since they're already cooked. 
  • Instead of crushed tomatoes, you can use a can of peeled whole tomatoes. 
  • Serve this dish with Greek lemon rice, pita or Lebanese rice and vermicelli. You can also serve fasolakia as a side dish for keftedes, soutzoukakia or baked Greek chicken.
