Fattoush Salad Recipe
A recipe inspired by the Lebanese classic - fattoush salad. This version has the addition of "hot-smoked" salmon paired with an exotic dressing.

Ingredients
FOR THE SALAD:
- 2 pita bread
- 1 capsicum finely chopped
- 250 g cherry tomatoes cut in half
- 2 cucumbers Lebanese, sliced thinly
- 4 radishes small ones, thinly sliced
- 4 spring onions thinly sliced
- 1 cup flat-leaf parsley finely chopped
- 1 cup mint finely chopped
- 250 g smoked salmon "hot-smoked", broken into even pieces
FOR THE DRESSING:
- ¾ cup olive oil
- Juice of 1 lemon
- 1-2 tablespoon molasses pomegranate
- 1 teaspoon sumac
- 1 pinch salt
- 1 pinch pepper
Instructions
- Preheat your oven to 190 deg C and line a baking tray with baking paper.
- Brush a little olive oil over the pita bread, place on a baking tray and cook for 5-8 mins until the pita bread is crisp. Remove and allow to cool.
- Add the capsicum, cherry tomatoes, cucumbers, radishes, spring onions, herbs and salmon to a large bowl. Crush the cooled pita bread with your hands and add to the salad ingredients.
- Whisk the dressing ingredients in a large jug and pour over the salad, toss and serve immediately.
