Ingredients

  • 2 cups raw cashew nuts
  • 2 cups Medjool dates
  • 1/2 cup rolled oats
  • 1/4 cup sunflower seeds
  • 1 tsp vanilla essence
  • 1/2 cup frozen blueberry

Instructions

  1. Pour the cashews and oats into your food processor and blend for 2 minutes or until it forms a coarse crumb.
  2. Add all of the rest of the ingredients and blend until it all comes together. Test the dough by taking about a tablespoon of dough and squeezing it together in your hands. It should stick together but not be sticky. If it’s too sticky add extra oats or if it’s too dry and doesn’t stick together add extra dates and blend again.
  3. Break off about a tablespoon of dough at a time and roll it into a ball. Repeat until you have finished all of the dough.
