Ingredients
- 2 ¼ cups quick cooking oats
- 2 cups whole wheat flour or spelt flour
- 1 cup sunflower seeds
- 1 cup dried cranberries or raisins
- ½ cup pumpkin seeds
- ½ cup coconut flakes unsweetened
- ¼ cup ground flax
- 2 teaspoons cinnamon
- ⅔ cup maple syrup
- ¼ cup molasses
- ¾ cup vegetable oil
- 1 cup almond milk
- 1 ½ cup dark chocolate chips
Instructions
- Preheat oven to 325°F.
- In a large bowl combine oats, flour, sunflower seeds, dried cranberries, pumpkin seeds, coconut, ground flax, and cinnamon.
- In a second bowl whisk together the maple syrup, molasses, vegetable oil, and almond milk.
- Add the wet ingredients to the dry ingredients. Mix until combined. Fold in the chocolate chips.
- Place ⅓ cup scoops on a parchment-lined pan and press to flatten slightly.
- Bake 23-26 minutes or until lightly browned.
