Ingredients
- 1 tablespoon avocado oil or oil of choice
- 1/2 cup brown rice
- 1 large yellow onion diced
- 2 stalks celery chopped
- 1 carrot peeled and chopped
- 6 cloves garlic minced
- 1 large fennel bulb chopped
- ½ teaspoon fennel seeds
- ¼ teaspoon rosemary
- ½ teaspoon Turmeric
- 1 teaspoon herbs de provence or Italian seasoning
- 1 teaspoon salt or to taste. Adjust amount of salt according to how salty your broth is
- 8 cups chicken or vegetable broth
Instructions
- Add the chicken/vegetable broth and bring to a full boil.
- Cover the pot, reduce heat to medium low and simmer for 40 minutes.
- The soup is ready when the veggies are soft but still al dente. If you prefer very soft veggies, cook longer at a higher temperature.
