Ingredients

  • 2 medium fennel bulb
  • 1 lemon Juiced
  • 2 tbsp olive oil
  • salt To taste
  • black pepper To taste
  • 1 handful parsley Fresh, chopped, leaves

Instructions

  1. Trim the tops and bottoms of the fennel bulbs. Cut them in half lengthwise and remove the tough core. Thinly slice the fennel using a sharp knife or a mandolin slicer.
  2. In a large mixing bowl, combine the sliced fennel and chopped parsley.
  3. In a separate small bowl, whisk together the lemon juice, olive oil, salt, and pepper until well combined.
  4. Drizzle the dressing over the fennel and parsley. Toss everything together to ensure the salad is evenly coated with the dressing.
