  • black pepper To taste
  • 1 handful parsley Fresh, chopped, leaves

  1. Trim the tops and bottoms of the fennel bulbs. Cut them in half lengthwise and remove the tough core. Thinly slice the fennel using a sharp knife or a mandolin slicer.
  2. In a large mixing bowl, combine the sliced fennel and chopped parsley.
  3. In a separate small bowl, whisk together the lemon juice, olive oil, salt, and pepper until well combined.
